Cheesy Meatball Potato casserole

Cheesy potato and meatball casserole


Meat mixture


1 1/2 lbs ground chuck

2 Tsp garlic powder

1 Tsp each onion powder, basil, oregano, thyme

2 Tsp salt and pepper

1 egg


Cheese sauce

1 (8oz) softened brick cream cheese

1/4 cup chicken stock

1/2 cup milk of choice

2 Tbls cornstarch

1 tsp salt and pepper

2 tsp garlic powder


5 small-medium gold potatoes diced small


2 cups broccoli florets


1 cup shredded Colby jack cheese


Whisk together cheese sauce ingredients, set aside.


In a separate bowl mix meatball ingredients together, set aside.


Set oven to 350*. In a 13”x 9” baking dish add dice potatoes and broccoli. Pour cheese sauce over potatoes. Store to combine.

Form meatballs into 1” balls and set on top of potato mixture. Cover with foil, bake for 35 minutes.


Uncover, stir mixture then top with shredded Colby jack cheese and cook for 10 more minutes.


Let rest for 5 minutes and serve!
