Momma Bs Tomato Soup

1 14.5 oz cans diced tomatoes with Italian seasoning
1 8oz can tomato sauce
1 tsp sugar
2 tsp each oregano, and thyme
3 tsp each garlic powder and basil
2 tsp salt and pepper
2 tbls sour cream
2 stalks celery diced
1/4 medium onion diced
1/4 cup carrots diced
2 tbls extra virgin olive oil
1 14.5 oz can chicken broth
Add olive oil to a pot over medium heat add diced veggies. Cook for 5 minutes until softened. Season with salt and pepper. Add diced tomatoes cook for 2 minutes. Remove mixture to a blender and blend up with a couple tablespoons of chicken broth. Return to pot. Add sugar, tomato sauce, herbs, the rest of the chicken stock. Cook another 5 minutes. Taste and add more salt and pepper if needed. As sour cream whisk to incorporate well. Cook another 3-5 minutes until mixture is a slow boil. Serve with extra sour cream or cheese.
